عدسی یا آش عدس، نوعی خوراک است که ماده اصلی آن را عدس تشکیل میدهد.این آش یکی از آشهای اصیل ایرانی است که تقریباً در تمامی نقاط کشور طبخ و بسیار مقوی، ساده و کم هزینه است و معمولاً به عنوان صبحانه خورده میشود اما میتوان در وعده های دیگر هم همراه با نان سرو شود.
اصولا در طبخ عدسی از عدس، پیاز، نعنا خشک، آرد اسفناج و ادویه جات مخصوص استفاده میشود و با نعناداغ و پیازداغ خورده میشود. اما میتوانید به سلیقه شخصی مواد اولیه آن را تغییر یا به آن بیافزایی، در بعضی مناطق در طبخ آن علاوه بر عدس، پیاز، رب و روغن و زردچوبه و ادویه های طعم دهنده ی غذا از گوشت چرخ کرده،سیب زمینی،گوجه و یا حتی هویج استفاده میشود.
مواد لازم
عدس یک لیوان
سیب زمینی متوسط یک عدد
پیاز سرخ شده سه قاشق غذاخوری
آرد یک قاشق غذاخوری
تخم مرغ دو عدد
مرزه خشک یک قاشق غذاخوری
روغن سرخ کردنی دو قاشق غذاخوری
نمک و فلفل و زردچوبه به مقدار لازم

طرز تهیه
عدس را میپزیم. بعد از پختن، آب آن را کنار گذاشته و عدس را میکوبیم تا کاملاً له شود.
در ظرفی روغن را ریخته و پیاز سرخ شده را همراه با آرد کمی تفت میدهیم.
سپس مرزه، نمک و زردچوبه و فلفل را به آن اضافه میکنیم و عدس کوبیده را به همراه آب عدس داخل آن میریزیم. اگر آب عدس کم بود، یک لیوان آب جوش به آن اضافه میکنیم.
سیبزمینی را خرد کرده و داخل عدس میریزیم و میگذاریم عدسی جا بیفتد.
بعد از این که سیب زمینیها پخت و عدسی غلیظ شد، دو عدد تخم مرغ را داخل آن میشکنیم.
بعد از چند جوش که تخم مرغها سفت شدند، عدسی آماده است.
عدسی را میتوانید با آب لیمو و ترشی بخورید.
نکته:
اگر مرزه خشک در دسترس نداشتید، میتوانید از شنبلیله خشک یا هر سبزی معطر دیگری هم استفاده کنید.
دستور پخت شماره 2 | مواد لازم
این عدسی فقط در صبحهای پاییز و زمستان و به همراه هلیم مخصوص اصفهان طبخ میشود. بافتی نرم و کاملاً پورهای، با عدس کاملاً غیرقابل تشخیص از نظر بافت، و عطر آویشن از خصوصیات منحصر به فرد این عدسی هستند.
دلیل تفاوت عدسی اصفهان، نوع عدس خاص موجود در منطقه است. عدس ریز، بدون پوست هست و لذا جدا شدن پوست باعث زبر شدن عدسی نمیشود. در دستور زیر فقدان آن عدس خاص با اضافه کردن کمی ماش به دستور جبران شده است. به عنوان آخرین نکته: عدس دستور هم باید از جنس عدسهای ریز قهوهای رنگ باشه و نه اون عدسهای پهن بزرگ و سبز رنگ.

تمام مواد به جز آویشن رو به همراه آب کافی (حداقل ده پیمانه) داخل آرامپز بفرستید و به مدت هشت ساعت روی حرارت کم بپزید تا پیاز محو و حبوبات متلاشی بشه. هر از گاهی همی هم بزنید بد نیست. در نهایت اگر عدسی زبر بود، نصف آن را در مخلوط کن پوره کنید و سپس به دیگ برگردانید. آویشن را اضافه و سرو کنید.

Ingredients
1 cup of green lentils
3-4 cups of stock (vegetable or chicken)
1 medium yellow onion, diced
1-2 medium cloves of garlic, diced or crushed
2 tablespoons of oil for sauteing
1 tablespoons of butter
½ tablespoon of turmeric
1 teaspoon cinnamon
1 teaspoon golpar (angelica powder)- optional
½ tablespoon of salt
½ teaspoon pepper
Instructions
Heat the butter and oil in a pot over medium heat.
Add the diced onions and saute gently until translucent (10-12 minutes).
Add the garlic, salt and turmeric and continue to saute for another minute. Add more butter or oil here if the pan is dry.
Add the lentils and 3 cups of stock to the pot - stir and bring to a boil on high heat.
Once your lentil mixture has come to a boil, reduce heat to low and cover.
Simmer for 45 minutes, stirring every so often to make sure nothing sticks and adding more stock as needed.
Add in the cinnamon and golpar. Taste the adasi and adjust seasonings if needed.
The dish is done when the consistency is a very thick soup (stewy but with no visible liquid).
Serve with bread, yogurt and enjoy!
