تیرامیسو (به ایتالیایی: tiramisù، به معنی «بِکِش منرو بالا») یکی از محبوبترین کیکها و دسرهای ایتالیایی است که برای تهیهٔ آن، بیسکوئیت را که معمولاً بیسکوئیت ساوویاردی (به ایتالیایی: savoiardi) است آغشته به قهوه نموده، سپس آنها را همراه با مخلوط همزدهای از پنیر ماسکارپونه، شکر و زردهٔ تخممرغ به صورت لایه لایه در ظرف گذاشته و با لیکور و کاکائو طعمدارش میکنند. از این دستورالعمل برای تهیهٔ انواع گوناگونی از پودینگها، کیکها و دسرهای دیگر نیز استفاده میشود.
تاریخچه
اکثر ریشهها و ابداع این دسر به دهه ۱۹۶۰ در منطقه ونتو (به ایتالیایی: veneto) در ایتالیا در رستورانی به نام Le Beccherie در شهر ترویسو (به ایتالیایی: ترویزو) ایتالیا برمی گردد. بعضی ادعاها همچنان باقیست اما به نظر میرسد ابداع کارمینانتونیو یاناکونه (به ایتالیایی: Carminantonio lannaccone) (برای اولین بار توسط دیوید روزنگارتن در گزارش روزنگارتن و بعداً در بالتیمور سان و واشینگتن پست مطرح شد) باشد که در ۲۴ دسامبر ۱۹۶۹ زمانی که او در رستوران سوتوترویزو (به ایتالیایی: Sottotreviso) در شهر ترویزو) به ایتالیایی ترویزو) نزدیک ونیز سرآشپز بود.

آموزش پخت و طرز تهیه تیرامیسو معمولی
تیرامیسو انواع گوناگونی دارد. بعضی از تیرامیسوها بدون تخم مرغ تهیه میشوند. در برخی هم از زرده استفاده میشود هم از سفیده تخم مرغ و برخی فقط با سفیده تهیه میشود.
ابتدا زردههای تخممرغ را با پودر قند و وانیل مخلوط کنید و به کمک همزن برقی با روش بنماری (حرارت غیرمستقیم) ۱۵ دقیقه بزنید تا کاملاً لیمویی و کشدار شود.
یک فنجان یا کمی بیشتر اسپرسو تهیه کنید.
خامه شیرین شده را نیز با همزن جداگانه بزنید تا کاملاً فرم بگیرد و سفت شود.
پنیر خامهای را با همزن بزنید تا یکدست و صاف شود. سپس مخلوط زرده تخم مرغ، پودر قند و وانیل را بیفزایید و در نهایت، خامه فرم گرفته را نیز بریزید.
یک ظرف مناسب بلوری انتخاب کنید و کف ظرف را با نانهای لطیفه که آغشته به محلول قهوه است بپوشانید. نانهای لطیفه را به این ترتیب آماده کنید که آنها را از یک طرف با محلول قهوه مرطوب نمایید.
دور تا دور ظرف را هم مقداری شکلات رنده شده بریزید و سپس از مایه فوق که آماده کردهاید مقداری روی نانها بریزید و دوباره روی مایه پنیر را با نان لطیفه آغشته به محلول قهوه بچینید و مقداری شکلات رنده شده دور تا دور ظرف بریزید. این عمل را دوباره تکرار کنید تا مواد پنیری تمام شود.
در آخر، روی تیرامیسو مقداری شکلات رندهشده و بادام پرک و تُستشده بریزید.
لازم است این دسر، حتماً یک شب در یخچال بماند تا کاملاً سفت شود.

برای درست کردن مواد میانی: شکر و نشاسته ذرت و نسکافه و کاکائو را داخل شیر سرد ریخته و خوب مخلوط میکنیم تا گوله نشود.روی حرات میزاریم و تند تند هم میزنیم مثل ماست سفت بشه
مواد را میگذاریم سرد شود.خامه شکلاتی و ساده رو باهم مخلوط میکنیم.و مواد میانی ک سرد شد به خامه ها اضافه میکنیم و هم میزنیم باید مخلوطی سفت مانند سس درست شود

Tiramisu (meaning "pick me up" or "cheer me up") is a coffee-flavoured Italian dessert. Historical records state that Tiramisu has aphrodisiac effects and was served in brothels in Treviso. Accounts by Carminantonio Iannaccone (as first reported by David Rosengarten in The Rosengarten Report and followed by The Baltimore Sun and The Washington Post) claim the tiramisu sold at Le Beccherie was made by him in his bakery, created by him on 24 December 1969. Other sources report the creation of the cake as originating towards the end of the 17th century in Siena in honour of Grand Duke Cosimo III. Regardless, recipes named "tiramisu" are unknown in cookbooks before the 1960s. The Italian-language dictionary Sabatini Coletti traces the first printed mention of the word to 1980, while Merriam-Webster"s Online Dictionary gives 1982 as the first mention of the dessert.
There is also evidence of a "Tiremesù" semi-frozen dessert served by the Vetturino restaurant in Pieris, in the Friuli Venezia Giulia, since 1938. This may be the name"s origin, while the recipe for Tiramisu may have originated as a variation of another layered dessert, Zuppa Inglese.
It is mentioned in Giovanni Capnist"s 1983 cookbook I Dolci del Veneto. Among traditional pastry, tiramisu also has similarities with many other cakes, in particular with the Charlotte, in some versions composed of a Bavarian cream surrounded by a crown of ladyfingers and covered by a sweet cream; the Turin cake (dolce Torino), consisting of ladyfingers soaked in rosolio and alchermes with a spread made of butter, egg yolks, sugar, milk, and dark chocolate; and the Bavarese Lombarda, which is similar in the preparation and the presence of certain ingredients such as ladyfingers and egg yolks (albeit cooked ones). In Bavarese, butter and rosolio (or alchermes) are also used, but not mascarpone cream nor coffee.
Interest in tiramisu in the United States increased in 1993 when Tom Hanks" protagonist in the comedy Sleepless in Seattle heard of it only as a mysterious thing that modern women loved.
On July 29, 2017, Tiramisu was entered by the Ministry of Agricultural, Food and Forestry Policies on the list of traditional Friulian and Giulian agri-food products in the Friuli Venezia Giulia region.
