کیک پنیر یا چیزکیک شیرینی مغذی و پرمایهای است که از پنیر دَلَمه یا پنیر خامهای و دیگر افزودنیها تهیه میشود.برای تهیه کیک پنیر غالباً از پنیر خامهای و پنیر ماسکارپونه استفاده میشود. این نوع کیکها دو نوع دارند که یا پختهشده هستند یا غیرپخته که پس از آمادهسازی در یخچال گذاشته میشوند تا آماده و سفت گردند. کیک پنیر نیویورک اصیلترین نوع کیک پنیر است که برای تهیه آن باید نکات زیادی رعایت شود.

اولین چیزکیک جهان در سال ۷۷۶ در جزیره دلوس یونان با کرم تازه پنیر درست شد و به عنوان شیرینی برای پذیرایی از ورزشکاران المپیک در اولین دوره برگزاری آن در طول تاریخ مورد استفاده قرار گرفت. در سال ۱۸۷۲ جیمز کرفت در تلاش برای درست کردن پنیر فرانسوی نوف شتل (neufchatel) بهطور تصادفی پنیر تازه پاستوریزه را کشف کرد که بعدها فیلادلفیا نامگذاری شد و در سال ۱۸۸۰ استفاده از این پنیر به صورت گسترده آغاز شد و در دستور کیکهای پنیر مدرن قرار گرفت.

مواد لازم برای قالب ۲۰ سانتیمتری
پنیر خامهای : ۲۵۰ گرم
شکر : ۸۰ گرم | دو قسمت میکنیم نصف آن را برای داخل پنیر و نصف دیگر را در داخل سفیده تخممرغ میریزیم.
زرده تخم مرغ : ۳ عدد
خامه : ۸۰ گرم
نشاسته : ذرت | (cornstarch) ۲۰ گرم
آبلیمو : یک قاشق غذاخوری | ۱۵ میلی لیتر یا نصف یک لیموی تازه
گران مارنیه : یک قاشق غذاخوری ۱۵ میلی لیتر | در دستور اصلی آمدهاست
سفیدهٔ تخم مرغ : ۲ عدد | یک سفیده کمتر از زرده بکار میرود.
پنیر خامهای : ۲۵۰ گرم
شکر : ۸۰ گرم | دو قسمت میکنیم نصف آن را برای داخل پنیر و نصف دیگر را در داخل سفیده تخممرغ میریزیم.
زرده تخم مرغ : ۳ عدد
خامه : ۸۰ گرم
نشاسته : ذرت | (cornstarch) ۲۰ گرم

طرز تهیه

۱. در یک کاسهٔ بزرگ که همهٔ مواد در آن جا بگیرد، پنیر خامهای را به همراه یک دوم شکر تا حدی با تخم مرغ همزنی بهم میزنیم که تقریباً نرم شود.
۲. یکی یکی زردهها را به داخل پنیر اضافه کرده و با تخم مرغ همزنی دستی یا برقی بهم میزنیم سپس خامه و نشاسته ذرت (cornstarch) و آبلیمو و در صورت تمایل گران مانیه را اضافه کرده بهم میزنیم. لازم نیست مانند کیک اسفنجی خیلی بهم زده شود. کافیست مواد یکدست شود.
۳. سفیده تخم مرغ را با تخممرغ همزنی بهم میزنیم و در حین بهم زدن نیم دیگر شکر را در چند قسمت به سفیده اضافه میکنیم تا سفیده کاملاً سفت شود. ابتدا یک سوم سفیده را به مواد دیگر افزوده به آرامی با لیسک بهم میزنیم سپس بقیه را هم اضافه کرده تا سفیدیِ سفیده ناپدید شود. مواد را در داخل قالبی که هم کف آن و هم کنارهها با کاغذ روغنی پوشانده شده، میریزیم.
۴. قالب را در داخل سینی فر قرار داده و در داخل سینی آب داغ فراوان ریخته به روش بن ماری در دمای ۱۷۰ درجه به مدت در حدود ۵۰ دقیقه تا یکساعت میپزیم. در صورتیکه در حین پخت آب سینی فر تمام شد باز هم آب داغ در داخل سینی میریزیم. امکان دارد فر خوب تنظیم نباشد و قبل از یکساعت روی کیک تیره شود، بنابراین در اواخر پخت هر گاه روی کیک به رنگ قهوهای درآمد آن را از فر بیرون میآوریم.
کیک را بهتر است قبل از سرد شدن، از کاغذ جدا کرد.

The earliest extant cheesecake recipes are found in Cato the Elder"s De Agri Cultura, which includes recipes for three cakes for religious uses: libum, savillum and placenta. Of the three, placenta is most like most modern cheesecakes, having a crust that is separately prepared and baked.
A more modern version is found in Forme of Cury, an English cookbook from 1390. On this basis, chef Heston Blumenthal has argued that cheesecake is an English invention.
The English name cheesecake has been used only since the 15th century, but the cheesecake did not evolve into its modern form until somewhere around the 18th century. Europeans began removing yeast and adding beaten eggs to the cheesecake instead. With the overpowering yeast flavor gone, the result tasted more like a dessert treat.
Modern commercial American cream cheese was developed in 1872, when William Lawrence, from Chester, New York, while looking for a way to recreate the soft, French cheese Neufchâtel, accidentally came up with a way of making an "unripened cheese" that is heavier and creamier; other dairymen came up with similar creations independently.
Modern cheesecake comes in two different types. Along with the baked cheesecake, some cheesecakes are made with uncooked cream-cheese on a crumbled-cookie base. This type of cheesecake was invented in the United States.
