آموزش پــــخت بیسکویت لیدی فینگر (Ladyfinger) در خانه
بیسکویت لیدی فینگر (به انگلیسی: Ladyfinger) یکی از انواع کیکهای اسفنجی و بیسکویت است. این بیسکویت برای درست کردن کتاب آشپزی/کیک شارلوت و کتاب آشپزی/تیرامیسو بکار برده میشود.طرز تهیه خمیر
مواد لازم :
۱ - سفیده تخم مرغ سفیدهٔ مقدار : ۳ عدد تخم مرغ یا ۹۰–۱۰۰ گرم
۲ - شکر داخل سفیده مقدار : ۷۰ گرم
۳ - نمک مقدار : اندک
۴ - زرده تخم مرغ مقدار : ۳ زردهٔ ۳ عدد تخم مرغ یا ۶۰ گرم
۵ - آرد الک شده مقدار : ۷۵ گرم
۶ - پودر قند یا شکر مقدار : به میزان لازم
آموزش گام به گام پخت :
۱. بر روی سینی فر کاغذ روغنی را پهن میکنیم. ماسورهٔ صاف و بدون دندانه به عرض یک سانتیمتر را در درون قیف قنادی قرار میدهیم.
۲. سفیده را میزنیم تا کاملاً کف کند شکر را در سه نوبت به سفیده اضافه میکنیم و آنقدر میزنیم تا کاملاً سفیده سفت شود و با برگرداندن ظرف از آن نریزد.
۳. زرده را به سفیده افزوده و کمی با بهمزن مخلوط میکنیم.
۴. آرد را از الک گذرانده به این مایه اضافه میکنیم و خوب با لیسک بهم میزنیم. تا ذرات سفید آرد به طور کامل ناپدید شود.
۴. مواد مخلوط شده را در داخل قیف میریزیم. خمیر را بر روی کاغذ روغنیای که روی سینی قرار دارد بصورت نوارهایی به طول ۸ سانتیمتر پهن میکنیم.
۵. در فر که از قبل گرم شده با حرارت ۲۰۰ درجه به مدت ۱۲ دقیقه میپزیم.
Ladyfingers, sometimes known by their original Italian name savoiardi, or as sponge fingers in British English, are low density, dry, egg-based, sweet sponge biscuits roughly shaped like a large finger. They are a principal ingredient in many dessert recipes, such as trifles and charlottes, and are also used as fruit or chocolate gateau linings, and sometimes for the sponge element of tiramisu. They are typically soaked in a sugar syrup or liqueur, or in coffee or espresso for the dessert tiramisu. Plain ladyfingers are commonly given to infants, being soft enough for teething mouths, but easy to grasp and firm enough not to fall apart.
History
Ladyfingers originated in the late 15th century at the court of the Duchy of Savoy and were created to mark the occasion of a visit by the King of France. Later they were given the name Savoiardi and recognized as an "official" court biscuit. They were particularly appreciated by the young members of the court and offered to visitors as a symbol of the local cuisine.
